Žlahtina

Žlahtina is a white Croatian, coastal, autochthonous grape variety. It got its name from the old and original word coming from Vrbnik - "žlahtan", which means noble.

It is of oriental origin, medium lush and medium high yield. Žlahtina is mostly grown in the vineyards of Vrbničko polje, the winegrowing site which was created as a product of flooding throughout history. However, nowadays more and more plantations of Žlahtina are spreading beyond the Vrbničko polje, to prime positions for wine production, namely the slopes towards the southwest, where many new potentials of the variety come to the fore. The wine obtained from Žlahtina is low in alcohol (11-12% vol. alcohol), somewhat lower in acidity (4.5-5 g/l), and has a weaker body and structure, therefore it is very light. It is greenish-yellow in color, with fruity, discreet aromas and flavors, which is why many call it a summer evening wine. It is recommended to serve at a temperature of 10-12 °C.

Sansigot

Sansigot (Sušćan) is a black, autochthonous, Croatian grape variety. It was named after the island of Susak, which the local population calls Sanseg.

The distribution of Sansigot was from the North Adriatic – Kvarner region to the Zadar island archipelago. Sansigot is a wine with pleasant aromas of sweet and sour cherries, light, low alcohol – 12% vol., structurally not heavy. Keeping it in barrique barrels made from a combination of Slavonian and French oak for 7-8 months gives it a special note.

Trojišćina

Trojišćina is a red grape variety. It has been cultivated on the sandy island of Susak in the Kvarner region from ancient times, but it was also quite widespread in the vineyards of the neighboring Kvarner islands, especially Cres and Lošinj.

Rosé Šipun, made from the autochthonous Kvarner grape variety Trojišćina red, is a light, delicate and pink, pleasant, refreshing summer wine. Trojišćina is supposed to be drunk fresh and chilled. It is characterized by fruity aromas of melon, watermelon, peach and raspberry, as well as a nice durability.

Kapitul

Kapitul is black (red) wine, made with a Bordeaux style coupage. It consists of three grape varieties: Cabernet Sauvignon (70%), Merlot (25%) and Petit Verdot (5%). The vineyards are located near Vrbnik, at the position of Hlam, at 225 m above sea level.

The plantation has a south-west exposure and a favorable inclination. Yields per vine are very low, giving up to 500 g per vine only. The technological processing consists of this wine aging for 2 years in barrique barrels (made from 70% French oak and 30% Slavonian oak), and it matures in bottles for another 2 years.

Kapitul is a wine with a strong structure, pleasant tannins and the characteristic smell of cherry, berries, coffee, and cinnamon.

It is recommended to decant it before drinking.

Maličić

Maličić is a sparkling wine made according to the charmat method. The base wine for its production is the Žlahtina grape variety.

The grape harvest for this sparkling wine begins ten days before the regular harvest. It is therefore characterized by a pleasant freshness and a greenish color. It has citrus and floral aromas and is particularly recommended as a refreshment on hot summer days.

Žlahtina Hlam 9

KLAUDIO JURČIĆ & IVICA DOBRINČIĆ

Žlahtina Hlam 9 is a collaboration between Šipun winemaker Ivica Dobrinčić and Klaudio Juričić, who is a multiple Croatian master sommelier and manager of the Bevanda restaurant in Opatija

Grapes are from the location of Hlam, grown 225 meters above sea level: meliorated karst, a “harsher” position and smaller yields result in grapes of better quality. Wine from this locality is a reflection of the special and unique ecological conditions of the “homeland” of the grapes: the soil, microclimatic factors (climate, air flow, humidity, exposure) and a southwest orientation as well as favorable insolation and inclination.

It is characterized by minimum vineyard protection according to the biodynamic calendar. Wine is made by short simultaneous maceration and fermentation lasting three to four days.

Fermentation is spontaneous with autochthonous yeasts. The wine ages for two years in stainless steel and no oenological agents were used except for minimal sulfurization. Clarification is spontaneous, gravitational and the wine is “made in the vineyard

Muškat

Muscat Šipun is a semi-sweet wine made from 85% white Muscat and 15% yellow one. It is a wine with complex aromas, alternating scents of elderberry, citrus, apricot, meadow honey, nutmeg and mint.

Its special aroma is given by the ecological conditions which, along with the continuous and direct flow of air from the sea, enable the production of almost ecological grapes. The flora of the micro location – kush, immortelle, marjoram, pines – contributes to the special aromatic specificities of this wine. The grapes are grown in a vineyard located in the Hlam location at 225 m above sea level, with southwest exposure and favorable inclination. Muscat Šipun is drunk fresh and chilled.
